We decided to drive up to the Pocono Mountains.
They were very beautiful, really green, and Sheryl Ann got great pleasure in pointing out the local flora and fauna as we drove through the countryside. By late afternoon we were tired and decided to find a place to stay. It was the tourist season and the only thing we could find was the Honeymoon Suite at the Hideway Lodge. Neither of us had ever seen a waterbed before, which looks like a regular bed but sloshes when you lay down on it. This one vibrated, too, which Sheryl Ann said was like a gift from the angels, because of the slipped disc she has. There was a mirror right on the ceiling above the bed, too, so Sheryl Ann could could fix her hair and put on her face in the morning without even sitting up. We decided to stay in and order room service for dinner and watch the movies they had on the cable in the room. We changed our minds about the movies because they all looked like love stories with names like "He And She Too" and "Women Who Love To Please Men" and Sheryl Ann doesn't like love stories, but we had a very nice dinner and we got a free bottle of champagne, which made Sheryl Ann all giggly so that she started bouncing on the bed and singing "Popeye The Sailor Man." Our dinner was crepes, which are sort of like pancakes but thinner and all rolled up with chicken inside. Very delicious.
Hideaway Chicken Crepes
1 1/4 cups sifted flour
1 teaspoon salt
2 eggs, beaten
1 cup milk
1 tablespoon salad oil
4 tablespoons butter
Filling:
1 cup chopped chicken meat
1 cup chopped mushrooms
1 cup sour cream
1 tablespoon chopped parsley
1 tablespoon chopped garlic
4 tablespoons butter
salt
pepper
Combine the flour and salt. Gradually add the eggs and the milk, beating steadily until the mixture is smooth and completely free of lumps. Add the oil and beat 1 minute longer. Chill for 2 hours. Place a small piec of butter in a 6 inch frying pan and when it begins to bubble pour 2 tablespoons of the batter into it, and turn from side to side, to spread the batter evenly and thinly. Cook over very low heat for 1 minute, then turn over and cook for about 30 seconds. Remove carfully to a plate. Repeat the process until the batter is used up. Be very careful not to tear the pancakes when removing them from the pan. In a separate pan saute the chicken meat in butter with the mushrooms, garlic and seasoning. Roll crepes with chicken, mushrooms, seasoning and sour cream inside. Serve topped with sour cream.
